We present an easy version of a drink featured on a new menu. Designed as a party-sized premix that's packed with the tastes of a Christmas time, which makes it ideal for a festive gathering. Reserve the remaining cordial for brunch beverages, desserts, or to make additional servings of bikinis.

The Bikini Cocktail

Makes enough for 10 guests

For the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Drink (yields 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Place the listed items inside a pot, heat until it reaches a light boil, agitating so the sugar melts. Next, remove from the burner and leave to cool entirely. Pour to a sealable bottle, close it and store chilled, where it will keep for around a month.

For the Batch Mix: Pour every spirits and syrup in a sizeable container, leave to sit for one hour, then filter it , ideally through a fine cloth, to ensure it's fully clarified.

To serve: Measure 85ml of your batch mix to a stirring glass containing ice, and agitate carefully for a minute until cold. Filter into a chilled martini glass or equivalent, top with a few cranberries adding the final touch by giving it a light spray with the mandarin essence above the glass.
